Buttermilk Pancakes

So I'm reposting this as part of Wardeh's Tuesday Twister Blog Carnival and also because we've enjoyed these pancakes at least 3 times since I tried the recipe conversion the first time. It's SO easy & tasty. Especially with chocolate chips! (I buy Trader Joe's, which although they have Soy Lecithin as an emulsifier, apparently theirs is Non-GMO). They are great as leftovers too, to pack for a to-go breakfast.
I am also working on a Sourdough starter & planning to render my own Milk-fed Heritage pork fat into lard. Stay tuned!

Good Morning! How about some scrummy blueberry pancakes?

The key to fluffy pancakes is not to overmix the batter; it should not be beaten smooth.
If serving these pancakes with bacon, reserve half a teaspoon of bacon drippings to grease the griddle instead of butter.
(Can you believe MS said that?!?!?!)

Ingredients

Makes nine 6-inch pancakes

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 large eggs, lightly beaten
  • 3 cups buttermilk
  • 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle

Directions

  1. Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
  2. Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter or reserved bacon fat onto griddle. Wipe off excess.
  3. Using a 4-ounce ladle, about 1/2 cup, pour pancake batter, in pools 2 inches away from one other. When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.
  4. Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.
I used the Martha Stewart Buttermilk Pancakes recipe, but of course, I changed out a few key ingredients: homemade raw buttermilk, farm fresh eggs, organic sugar, kerrygold butter, and sprouted soft white wheat...
I had Organic Blueberries in the freezer, Cascadian farms (from Costco! believe it or not)
We like our pancakes, less cakey & more crepe-like, so I added a splash of raw milk to thin the batter & also poked a whole in the center (after flipping) to sort of deflate....
You seriously could not tell these where whole wheat, or 'healthy' in any way, they were SO tasty! We served with more kerrygold butter, real maple syrup or homemade blackberry jam.

Jammin'

Look at the funny way Azure shipped my Rhubarb!  It was SO long! Longer than my huge sink is deep!  Crazy, huh?! :)


Ok, so I'm sure by now you all know that I buy a LOT of my goods from Azure (whatever I can't get thru my CSA & our new Organic Pastures Co-Op!), on my very first 'shopping' adventure with them, I stumbled upon Pomona's Universal Pectin.  Never heard of it!  So I read up on it & you can make jams & jelly's with honey!  And low sugar!  It's AWESOME stuff!  Each purchase (you can buy a small packet or a pound - thru Azure is the best price) comes with a recipe sheet, but if you lose it (like I always manage to do!) it's also on their site as a PDF.  It's so easy to do all kinds of concoctions with this stuff!  Here are some of the combo's I've done:
Peach, Ranier Cherry, Blueberry w/Lemon Zest, Blueberry Rhubarb, Peach Rhubarb, Peach BBQ Sauce (recipe from Ball's Jam Book).  Today I'm going to try Orange Plum & Orange Peach.  After I get some more Rhubarb from Azure I want to try Strawberry Rhubarb!
Look at all the gorgeous blueberries, we are getting 2.5 pounds for 10!  I got 2!  The catch?  They come in a baggie & many still had stems on, so I carefully sorted them, I literally put a very small handful into the compost, the rest we gorgeous!  I sorted into 'soft for jam' & firm for freezing.

I have made a LOT of Jam in the past few years.  I started out with my Aunt Dor making microwave Jam, her thing is that every year, the day after Thanksgiving she'll make about 4 batches of her famous Pear Raspberry Jam for Christmas gifts for all her co-corkers.  If we were lucky she'd have  a few leftover for our Family's White Elephant game & 2-3 lucky lucky family members would get a small jar to last the year....She also made a microwave Jalapeno Jelly.  Although I will no longer use the microwave, I am really glad to have learned from her,it was so easy & that is still one of my most popular flavors & I add Jalapeno's to it now, for a spicy twist!

Azure Standard

Ok, so last month was our first GO with Azure & I think I can speak for Tami when I say we are in love!  *smile*
Here's a few snaps of our loot:
Tami is dividing up the grains (we shared Soft White Wheat, Hard Red, Kamut, Spelt, Oat Groats & Rye
We Split a 25 lb tub of Raw Honey (my leftover 32 oz Agave Nectar jugs worked out great for that!)
We split a box of pears, Tami took hers home & the Chu Babies devoured them in short order.  I made about 2 gazillion batches of jam. ;)
This was my share of grains!
We also split a 10 Doz. box of Fertile Eggs three ways (with Terri), they are huge & wonderful!  After a month, Tami only needed to buy another dozen form TJ's before our next order, Terri still had plenty  & I had just run out.  This month just Tami & I split, so 5 dozen each!  Woo hoo!

As I said, this was January, so we've ordered again, Tami bakes bread 2-3 times a week, so she was thrilled to get a 50 lb. bag of Red Wheat for like $30!  She's also kept up using Soft White for all her baked goods like cakes & cookies, etc... with a noticeably finer texture!  Awesome!

We be Jammin'....


So my Friend, Terah cam over today & we JAMMED! I started at 8:30, she came at about 10am, and by 4 pm, we'd completed 9 different flavors of Jam - I now have every spare surface in my kitchen & dining room covered with Jam Jars!!

Here's what we did:

Pretty amazing!

Me? Well....I have a day job selling travel to beautiful far away lands, and I love to travel - my job sort of supports & feeds the 'travel monster' inside me. But my other inner monster is: food in all it's facets. I have a 13 yr old DS from a previous life, and married the lovely JoeBacon a three years ago! I finally became a home-owner at that point, we did a huge addition/re-model right away to make the house a bit bigger & I got a wonderful new kitchen out of the deal! I've gone thru Culinary School twice (mostly for fun) 'cuz I love to cook! And thru reading/doing the Maker's Diet 2 years ago, became aware of Sally Fallon, Weston Price, etc...and now after about 9 months of exploring their world, I'm trying to really make it all part of mine. I've had some things turn out great & others have been miserable failures, but I'm learning a LOT (mostly from my fellow NT Bloggers)!! Now I'm enjoying my yard, garden, sprouting, baking bread, brewing Kombucha, using raw milk, making Kefir & Yogurt & just trying to find small ways to make yummy food better for us.
