RAW Peach Ice Cream

peel & chop up about 8 peaches

put about 1/3 of the peaches in the blender with:
about 1.5 cup cream
about 1.5 cup milk
about 3-4 big blobs honey - best guess?  about 3/4 cup? maybe a bit more...taste it!
1 Tsp Vanilla Extract
1/2 Tsp Almond Extract
6 egg yolks

Blend it all up to dissolve the honey.  Taste, make sure it's sweet enough & tasty.  Don't be grossed out about the raw egg, it's Yolk only & in any case we know our eggs are happy & healthy.   RAW eggs won't hurt you!
I read that the freezing process actually reduces the sweetness, so make a bit more sweet than you actually like...

Freeze according to your manufacturer's directions.  I have the Kitchen Aid Ice Cream attachment & so far I am thrilled with it!  Couldn't be easier & now that I have a biger freezer, it has a constant home on the top shelf (easy access for me to use frequently!)

This also works with only three yolks, since I have to conserve eggs. lol It was WONDERFUL! Gone in two days.
To use up the left over(3)whites:
mix in the kitchen aid on high with the whisker. Add 1/4 tsp. cream of tarter, 1 tsp. vanilla, 1/4 c. sweetener, (I haven't tried honey yet, only the organic cane sugar-blush). Whisk until soft peaks form, then stir in choc. chips (or nibs). Spoon onto greased cookie sheet, bake at 350 for 20-22 minutes. Cool on a wire rack. Yummy cookies!

Me? Well....I have a day job selling travel to beautiful far away lands, and I love to travel - my job sort of supports & feeds the 'travel monster' inside me. But my other inner monster is: food in all it's facets. I have a 13 yr old DS from a previous life, and married the lovely JoeBacon a three years ago! I finally became a home-owner at that point, we did a huge addition/re-model right away to make the house a bit bigger & I got a wonderful new kitchen out of the deal! I've gone thru Culinary School twice (mostly for fun) 'cuz I love to cook! And thru reading/doing the Maker's Diet 2 years ago, became aware of Sally Fallon, Weston Price, etc...and now after about 9 months of exploring their world, I'm trying to really make it all part of mine. I've had some things turn out great & others have been miserable failures, but I'm learning a LOT (mostly from my fellow NT Bloggers)!! Now I'm enjoying my yard, garden, sprouting, baking bread, brewing Kombucha, using raw milk, making Kefir & Yogurt & just trying to find small ways to make yummy food better for us.
